Baked okra stew is one of those dishes that proves simple summer vegetables don’t need much to become something deeply flavorful. Fresh okra is combined with tomatoes, olive oil, herbs, and warm spices, then finished slowly in the oven until tender and infused with the tomato sauce.

This is the kind of dish I grew up knowing as Ամառային բամիա, or summer okra. My version keeps the ingredients simple while adding a few small techniques that create more depth — especially allowing the butter to cook slightly with the olive oil before building the sauce.

The result is a comforting but relatively light vegetable dish with tender okra, bright tomato flavor, and subtle notes of cinnamon, smoked paprika, and red basil.

It can be served as a vegetarian main course or side dish, and it is very easy to make vegan by omitting the butter and using vegetable stock instead of chicken stock.

Ingredients

  • 30 g butter

  • 30 ml olive oil

  • 350 g fresh okra

  • 350 g peeled tomatoes

  • 250 ml chicken stock

  • 1 bay leaf

  • 1/2 tsp sugar

  • Salt

  • Black pepper

  • Smoked paprika

  • Pinch of ground cinnamon

  • Dried red basil

  • Fresh parsley, chopped


Ingredient Notes

Okra: Fresh okra works beautifully here, especially when it is in season.

Tomatoes: Peeled tomatoes create the base of the sauce and slowly reduce during baking.

Stock: I use chicken stock in the original recipe. For a vegetarian or vegan version, use vegetable stock instead.

Butter: Butter adds richness and a subtle caramelized note. Skip it for a vegan version.

Cinnamon: Only a small pinch is needed. It shouldn’t make the dish taste sweet or strongly spiced — it simply gives the tomato sauce more depth.


How to Make Baked Okra Stew

Heat the butter and olive oil in a pan over medium heat. Allow the butter to cook slightly until it develops a light nutty, caramelized aroma.

Add the peeled tomatoes, chicken stock, bay leaf, sugar, salt, black pepper, smoked paprika, a pinch of ground cinnamon, and dried red basil. Stir everything together and allow the sauce to begin developing its flavor.

Add the fresh okra and gently combine it with the tomato sauce.

Transfer the okra and sauce to a baking dish and bake at 180°C / 350°F for 35–45 minutes, until the okra is tender and the tomato sauce has reduced around it.

Remove from the oven, discard the bay leaf, finish with freshly chopped parsley, and serve warm.


How to Make It Vegan

Simply omit the butter and replace the chicken stock with vegetable stock. The rest of the ingredients can remain the same.


Chef’s Tip

Give the sauce enough time in the oven to reduce rather than removing the dish as soon as the okra becomes tender. The reduced tomato sauce is what brings all of the flavors together.
